The most eye catching item we start off each week with is the red pepper - the little small mountain that we have to grill to our hearts' content.
The color is so cheerful, you can't help but smile. The peppers themselves just add pops of color to balance the presentation, beyond just being so yummy on their own.
Seriously though, peppers are good for you. Like most other vegetables, they provide fiber that helps with your digestion. We're hesitant to tout the antioxidant properties as the literature seems contradictory on the actual benefits of eating antioxidants, as the body produces its own antioxidant anyway.
